Peanut Butter Chocolate Chip & Pecan Buttermilk Pancakes

One thing it seems RVers and Campers love to do, is EAT!  If you’re a regular follower of our blog or facebook page Always On Liberty, you’ll know I love to chef it up in Liberty’s galley.  We’re going to have a little fun with this one.  It’s got food, a recipe and a little history thrown in a mixing bowl.

If you’ve ever seen the Alvin and the Chipmunks movie, you’ll remember watching a clip of Simon rifling through the drawer looking for his glasses.  Well, that’s precisely what I look like when shopping out of our reefer and cabinets for the makings of a meal fit for a king…er…the Captain while humming a sing song.

This morning was no exception.

While Captain Dan was out doing laundry, I wanted to make a special breakfast for him and since it just so happened to be National or International Pancake Day, what’s the good dutiful wife do?  (*sarcastic laugh*)

Make my Captain PANCAKES and bacon, of course!!

But don’t tell him I didn’t know about this whole Pancake Day because then he won’t think I’m a smartie pants. So let’s go with it and not tell! *nudge nudge*

Just so you can say you learned something today (as did I), here’s a little history lesson for ya!

“Pancake Day is also ‘Shrove Tuesday’ which is the traditional day of feasting before Ash Wednesday; the start of lent.  Lent lasts forty days until Easter.  Traditionally, it was a time of fasting and on ‘Shrove Tuesday’, Anglo-Saxon Christians went to confession, recited and prayed their penance and were forgiven of their sins aka “shriven”.  So, as it would have it, though this blog is posted a few days later, we did in fact have pancakes on Shrove Tuesday.  Coincidence that we didn’t even know that.”

Now, now, before you get all excited and argue about what Google will tell you, that’s our story and we’re sticking with it.  Others (and a certain I-Restaurant) will tell you its March 8th this year (2017).

So there, can’t say ya didn’t learn something today.  Let’s get back to the yummy part!

I didn’t make the traditional, same-ole-same-ole boring pancakes this time.  Though, it was tempting to just whip them out, I made something special for this day because a) he’s such a cool dude because HE does the laundry and b) I love him…A LOT!

So, I thought I’d share my….*drum roll*

Peanut Butter, Chocolate Chip and Pecan Buttermilk Pancakes

They are FLIPPING AMAZING!! (ha, see what I did there with my pun?)  If I only could figure out how to make this a scratch-n-sniff blog, I would but well, technology hasn’t risen to that level so you’ll just have to trust me on this.

So, put on your apron, chef hat and let’s get cooking. Get out your pancake flipper and flat skillet and either spray it with nonstick spray or ummmm, slather it real good with a stick of butter.  Grab a bowl, your whisk, measuring cups and the following ingredients:


  • 2 Cups Buttermilk Pancake Mix
  • 2 Cups Water
  • 1/4 Cup Peanut Butter
  • 1/2 Cup Mini Chocolate Chips
  • 1/2 Cup Chopped Pecans, Walnuts or Almonds
Toppings:  Bananas, Whipped Cream, Maple Syrup


Mix pancake mix, water and peanut butter; batter may be lumpy.  Lightly fold in chocolate chips and chopped nuts.  Heat skillet to 375 degrees (or medium to medium high).  Drop about 1/4 cup of batter for each pancake (I used an ice cream scoop).


Wait until bubbles pop before flipping (do not flip more than once).  They should look light brown on each side.

Top with your favorite toppings listed above or get creative with your own favorites and….

So, there ya go!  Raise your cup of Joe (or grog) up to being shriven…and forgiven!
