People ask us all the time how we downsized our home in 9 short months to go live full-time in an RV to travel the Country. Just downsizing our home size is gut-wrenching enough. But the process of getting rid of all of our belongings and crap is truly an eye-opening emotional roller coaster experience.

My Old Kentucky Home is known for several notorious icons; Corvettes and Colonel Sanders, Bluegrass and Bourbon. Kentucky is also recollected for a huge cash crop; tobacco. However, there’s something else inside those black-tarred tobacco barns that’s smokin’ hot!
Strangely, we didn’t really know what to expect once we pulled our fifth wheel out of that small Kentucky town. I guess you could say we had visions of visiting everything under the sun, cleverly writing postcards like Hemingway, going out everyday sampling local cuisines and wine tastings, sightseeing every inch of every State, etc. e-v-e-r-y-d-a-y! There is nothing like coming home from the Farmer’s Market with a basket full of fresh vegetables and herbs especially right before Cinco de Mayo! Its one of my favorite times in our RV galley. Like an artist with a new art set, I love to set my palette of beautifully colored fresh ingredients and create a culinary masterpiece. One of them is my Chipotle Lime Pico de Gallo.
